Vegan Sushi Rolls

Bell peppers contain an impressive amount of vitamin C with up to as much as six times as oranges. Bell peppers are also packed with vitamin A and beta carotene which can help boost the immune system, improve vision, and help protect the eyes against cataracts. They are also an excellent source of potassium, fiber, thiamine, beta carotene, folate, zeaxanthin, and lycopene and have been shown to help prevent blood clot formation and reduce the risk of heart attacks and strokes. 

They are excellent for helping to lower cholesterol levels and they contain anti-cancer compounds that can help lower the risk of prostate, breast, lung, and colon cancer. Bell peppers are highly beneficial for the brain and can help to strengthen memory and concentration skills as well as reduce brain fog and confusion.

Cucumbers are the perfect antidote. They have a fountain-of-youth effect, hydrating us at the deepest cellular level possible. Plus, cucumbers’ cooling effect makes them excellent at rejuvenation and especially effective at cooling a hot, stagnant liver. When eaten on a daily basis, cucumbers can reverse liver damage, dialing back 10 to 15 years of toxin exposure.

Avocados are an excellent source of glutathione which helps to boost the immune system, strengthen the heart, rebuild the nervous system, and slow the aging process. The monounsaturated fats in avocados reverse insulin resistance which helps to steady blood sugar levels.

Ingredients:

Rolls

  • 2 Nori Sheets
  • 1/3 cup julienned cabbage
  • 1/3 cup julienned red bell pepper
  • 1/3 cup julienned cucumber
  • 1/3 cup avocado
  • 2 cups cooked white/brown rice

Sauce

  • Coconut aminos
  • Wasabi

Instructions:

Spread the 2 Nori sheets side by side. Add 1 cup of cooked rice per sheet, spreading the rice to the edges of the sheet. Add the cucumber, cabbage, red bell pepper, avocado, in the center as shown below.

Then take the bottom of the sheet and roll the nori and rice over with your fingers, and once the veggies are covered, squeeze firmly and continue to roll until all rice is covered and all rolled up as shown below.

Slice with a sharp knife and enjoy.

Sauce: Add as much coconut aminos (soy sauce substitute) and wasabi as desired.
